Prepare 2 tbsp powdered sugar
Make ready as needed Hershey's chocolate almond spread
Get Other ingredients
Get 4 tbsp mixed fruit jam + 2 tbsp water
Take as required Golden balls
Steps to make Eggless Battenberg Cake:
Grease and dust the square tin. Divide into equal two parts as shown in the picture. I used aluminium foil in between and covered with butter paper. Take All-purpose flour, baking powder and baking soda.
Take All-purpose flour and cocoa powder. Sieve it.
Take oil and sugar
Add curd in sugar and oil. Mix it well. Meanwhile add coffee powder in chocolate cake mix.
Mix dry ingredients to wet ingredients.
Use cut and fold method and mix it well.
Pour it into greased baking tray as shown in the picture. Bake it in preheated oven on 180° for 35 minutes.
To prepare outer Layer, modelling chocolate is good but due to lockdown I didn't get so I took almond flour + powdered sugar and Hershey's spread.
Once cake is cool. Cut it into as shown in the picture. I kept sugar syrup ready if needed. But I used mixed fruit jam and sugar syrup together.
Spread the jam on the side and bring it together. Meanwhile roll it the outer layer.
Seal it properly from up. Cover it again with same butter paper and keep it in the fridge for overnight.
Slightly give dimond cut and decorate with golden balls.. - If Birthday girl/boy is happy, your hard work paid off..
