  1. First sift together flour, cocoa powder and coffee powder in a bowl.
  2. In another bowl add egg yolks, 1/4 cup sugar, milk, oil, vanilla essence,salt and mix well.
  3. Now add this mixture to the flour mixture and mix until smooth.
  4. Now in a sperate bowl whisk egg white with beater till foamy. Now add remaining half sugar and lemon juice.whisk again until stiff peak forms.
  5. Now gently fold the egg white mixture to the batter.(add egg whites into 2 or 3 batches and gently fold the mixture)
  6. Now pour this batter to the greased lined baking pan and keep the pan in preheated microwave and bake for 25-30 mins on 170℃.
  7. After done check it by inserting toothpick and let it cool completely.after cooling remove from pan and set aside.
  8. For making chocolate ganach– heat cream in a bowl add chopped chocolate stir and keep aside for 5 mins.after that mix well until smooth. if needed - microwave for 30secs.and mix until smooth.set aside.
  9. For icing the cake – cut the cake into two halves from center and start to apply /spread whipped icing cream all over on top and now place another half of the cake on it.now cover the whole cake with icing cream and put it in refrigerator to set for a while.(10-15mins).
  10. Now pour prepared white chocolate ganache on the cake and again keep it in refrigerator for around 15 mins.
  11. Now for decorating the cake – use any kinds of chocolates or wafers as per your choice and for making anti gravity cake, take an empty pouch of any candy,fill it with some tissue paper keep aside.
  12. Now take a straw and apply frosting on the straw and stick the gems onto the straw and keep it in freeze to set.Once ready assemble it by placing the straw and gems packet.add more gems to the base.Anti gravity cotton sponge cake is ready.
