The ingredients needed to make Chicken Biriyani:
  1. Prepare 1 kg chicken
  2. Get 500 gms long grain basmati rice
  3. Prepare 1/2 cup beaten yogurt (curd)
  4. Get 500 gms onions
  5. Take 25 gms garlic paste
  6. Make ready 25 gms ginger paste
  7. Take 10 gms cloves
  8. Prepare 10 gms cinnamonsticks
  9. Prepare 10 gms green cardamoms
  10. Make ready 50 gms mint leaves
  11. Take 5 gms kewra water
  12. Prepare 10 gms javitri
  13. Get 5 gms jayfal
  14. Get 10 gms sahajeera,sahamarich
  15. Make ready 4-5 string saffrons soaked in luck warm milk
  16. Take 3-4 tsp red chilli powder
  17. Take 1/2 tsp turmeric powder
  18. Make ready 2 tbsp oil
  19. Make ready Salt & sugar to taste
  20. Make ready 1 tomato chopped
  21. Prepare 1 tbsp ghee
Steps to make Chicken Biriyani:
  1. To prepare this mughlai recipe take a large bowl, mix yogurt.with red chilli powder,turmeric powder.along with ginger, garlic paste.
  2. Mix all the ingredients well & add chicken into the mixture & let the chicken marinate for about half an hour.
  3. Heat oil in a kadai,add greencardamom, sliced onions.Then add the marinated chicken& saute them well.
  4. Now add chopped tomatoes,red chilli powder, ginger, garlic paste & fried potatoes & saute them again till the oil separates.Cook the chicken on low medium flame.
  5. Now on another burner boil water in a pan & add the whole spices.Once the water starts boiling add the soaked rice & cooked it.
  6. Dry roast the Biriyani masala like nutmeg, mace, sahajeera saga marich,green cardamom,cinnamon & then grind them in a grinder.
  7. In a kadai add ghee, salt, sugar, dry roasted & grinded Biriyani masala,then the boiled rice.Add kewra water.Saute it for few mints.
  8. In a copper vessel heat ghee, then layer the fried Biriyani masala,then the cooked chicken & then again the rice.
  9. Now make a final layer of the garnish mint leaves, fried onions(beresta), saffron soaked milk & kewra water
  10. Make a dough of the whole wheat flour & line the lid with it.Seal the copper vessels & put the vessel in a preheated.ovenon 180 degree centigrade for 15 to 20 mints.
  11. Garnish with boiled eggs & serve hot with Raita.
