  1. Take 2 chicken thigh & leg combined
  2. Prepare For Marination-
  3. Take 1 cup yogurt
  4. Make ready 10 garlic cloves

  7. Get 1 ” ginger
  8. Make ready 2 Tbsp cashew soaked for 1 hour
  9. Get 2 Tbsp Char magaz soaked for 1 hour
  10. Get 2 Tbsp poppy seeds
  11. Prepare For Chaap Masala
  12. Get 1 ” cinnamon stick
  13. Prepare 1 tsp green cardamom
  14. Prepare 1 tsp cloves
  15. Prepare 1 tsp shahjeera
  16. Make ready 1/4 tsp nutmeg
  17. Take 1 tsp Shahmorich or white whole pepper
  18. Get 1 tsp Jaitri
  19. Take for Making Chaap
  20. Get 2 tsp Chaap Masala
  21. Prepare 1 tsp Kashmiri red chilli powder
  22. Get 1/2 tsp turmeric powder
  23. Get 2 Tbsp sattu or Gram flour powder
  24. Prepare 1 tsp Rose Water
  25. Prepare 1 tsp Kewra Water
  26. Take 2 drops Rose Atar
  27. Get as per taste Salt
  28. Make ready 1 tsp sugar
  29. Take 2 Tbsp white oil
  30. Prepare 2 Tbsp ghee
  31. Get 2 Tbsp milk mixed with pinch of Saffron
Steps to make Chicken Chaap:
  1. For Marination - Make small insertions on the Chicken legs and thighs.
  2. In a blender add poppy seeds and blend coarsely. To it add soaked cashew nuts, soaked Char Magaz, ginger, green chilies, chopped onions, and yoghurt. Blend smooth. Set aside marination paste.
  3. For Chaap Masala - Roast for 2 mins green cardamom, cinnamon stick, cloves, nutmeg, jaiphal, shahjeera and Shahmorich or whole white pepper. Add to a blender and blend smooth. Chaap Masala is ready
  4. For marinating the chicken - in a bowl add marination paste, red chilli powder, turmeric powder, 2 tsp Chaap masala, sattu, Rose water kewra water, Rose Atar, salt, sugar and oil. Whisk well.
  5. Add the chicken pieces and smear well. Refrigerate for 24 hours
  6. In a wok heat oil, ghee and add the marinated chicken pieces. On low flame fry them for 5 mins on each side. Once a little fried add the rest of the marinated masala and on low flame continue cooking covered for 35 mins
  7. Keep turning sides after every 5 mins. The Chaap would be done by now. Switch off the flame and keep covered for another 10 mins
  8. Serve with Biryani or Roomali Roti or Naan or Paratha and enjoy
