To begin with this recipe, we have to first prepare a few components. You can have chicken biryani using 30 ingredients and 9 steps. Here is how you can achieve that.

The ingredients needed to make Chicken Biryani:
  1. Prepare 1 kg Rice (soaked in water)
  2. Prepare 750 g Chicken
  3. Get 1 cup Oil/ghee
  4. Prepare 4 Onion
  5. Get 4 Tomatoes
  6. Make ready 10-12 Green chillies
  7. Prepare 1 tbsp Ginger garlic paste
  8. Prepare 2 tbsp Red chilli powder
  9. Make ready 1.5 tsp Turmeric powder
  10. Prepare 1.5 tbsp Coriander powder
  11. Take Salt to taste…. adjust accordingly in rice and gravy both
  12. Prepare 1 tsp All spice powder
  13. Make ready Cloves 6
  14. Take 5-6 Green cardamom
  15. Get 2-3 Black cardamom
  16. Get 2-3 Bay leaves
  17. Get 3 Cinnamon sticks
  18. Take 7-8 Whole black pepper
  19. Prepare 1 tsp Nutmeg and mace
  20. Prepare 1 tsp Cumin
  21. Make ready 5-6 Plum
  22. Prepare 3/4 cup Yogurt
  23. Take 1-2 tbsp Biryani masala
  24. Get 1 bunch Green coriander
  25. Prepare Mint leaves a bunch
  26. Take 1 tsp Vinegar
  27. Make ready 1 pinch Zarda/food color
  28. Make ready Milk to dissolve food color
  29. Take Kewra water
  30. Prepare Biryani essence
Steps to make Chicken Biryani:
  1. For Gravy: - *Take oil/ghee in a pan add sliced onions let it fry till golden brown..take it out on a tissue paper.
  2. In same oil/ghee add ginger garlic paste, tomatoes, green chillies (5-6), bhunofy a little then add chicken bhunofy it.
  3. Add whole spices, cumin seeds, red chilli powder, turmeric powder, coriander powder, salt, all spice powder.. bhunofy it.
  4. Mix biryani masala in whisked yoghurt, add this and plums in chicken. You can add a pinch food color at this stage.
  5. Add a little water and let it cook till tender.
  6. Bhunofy chicken gravy, add fried onions by crushing by hands (reserve some for layering),coriander leaves, mint leaves and green chillies cut in half. Mix them and gravy is ready.
  7. For Rice: - For rice take a big pot add water, salt, mint leaves, green cardamom, bay leaf, cloves, whole black pepper, give it a boil and add rice..at boiling stage add 1 tsp vinegar.. cook rice till 80-90% done then drain water.
  8. For Layering: - Take a big deep pot grease with some biryani masala oil put 1st layer of rice then gravy then rice and repeat rice should be on top.
  9. Sprinkle coriander leaves,mint leaves, green chillies, fried onions. Pour ghee on sides.. dissolve some food color in milk and kewra water plus few drops of bityani escensse..add this too..cover it and put on dam for 20-30 mints. Chicken Biryani is ready
