The ingredients needed to make Chicken Biryani:
Prepare 1 kg Rice (soaked in water)
Prepare 750 g Chicken
Get 1 cup Oil/ghee
Prepare 4 Onion
Get 4 Tomatoes
Make ready 10-12 Green chillies
Prepare 1 tbsp Ginger garlic paste
Prepare 2 tbsp Red chilli powder
Make ready 1.5 tsp Turmeric powder
Prepare 1.5 tbsp Coriander powder
Take Salt to taste…. adjust accordingly in rice and gravy both
Prepare 1 tsp All spice powder
Make ready Cloves 6
Take 5-6 Green cardamom
Get 2-3 Black cardamom
Get 2-3 Bay leaves
Get 3 Cinnamon sticks
Take 7-8 Whole black pepper
Prepare 1 tsp Nutmeg and mace
Prepare 1 tsp Cumin
Make ready 5-6 Plum
Prepare 3/4 cup Yogurt
Take 1-2 tbsp Biryani masala
Get 1 bunch Green coriander
Prepare Mint leaves a bunch
Take 1 tsp Vinegar
Make ready 1 pinch Zarda/food color
Make ready Milk to dissolve food color
Take Kewra water
Prepare Biryani essence
Steps to make Chicken Biryani:
For Gravy: - *Take oil/ghee in a pan add sliced onions let it fry till golden brown..take it out on a tissue paper.
In same oil/ghee add ginger garlic paste, tomatoes, green chillies (5-6), bhunofy a little then add chicken bhunofy it.
Add whole spices, cumin seeds, red chilli powder, turmeric powder, coriander powder, salt, all spice powder.. bhunofy it.
Mix biryani masala in whisked yoghurt, add this and plums in chicken. You can add a pinch food color at this stage.
Add a little water and let it cook till tender.
Bhunofy chicken gravy, add fried onions by crushing by hands (reserve some for layering),coriander leaves, mint leaves and green chillies cut in half. Mix them and gravy is ready.
For Rice: - For rice take a big pot add water, salt, mint leaves, green cardamom, bay leaf, cloves, whole black pepper, give it a boil and add rice..at boiling stage add 1 tsp vinegar.. cook rice till 80-90% done then drain water.
For Layering: - Take a big deep pot grease with some biryani masala oil put 1st layer of rice then gravy then rice and repeat rice should be on top.
Sprinkle coriander leaves,mint leaves, green chillies, fried onions. Pour ghee on sides.. dissolve some food color in milk and kewra water plus few drops of bityani escensse..add this too..cover it and put on dam for 20-30 mints. Chicken Biryani is ready
