  7. Add your tortillas, any way that you want to. I stack mine horizontally like tacos
  8. Take your pan off the heat, add cheese to the tortillas, and then beef mix. Save some for topping
  9. Add more enchilada sauce to the tortillas, then close them up-its okay if they keep folding open
  10. Add more sauce, then beef, and finally add a layer of cheese. (option: add chopped cilantro leaves, spread across sparlingly)
  11. Place in oven at 375 °F for 20 minutes

Remove the pan from the oven and take off the foil. Enchiladas can be stuffed with just about anything you would like. Roll the enchilada from end to end. Pull one end of the tortilla over the filling, and tuck in its contents. Pour enchilada sauce over the stuffed shells and cover with cheese.
