Instructions to make Bhat Bhaja:
  1. Heat oil in a pan, add ghee. Let it melt completely. Temper with cinnamon stick, cloves, green cardamom pods. Let them crackle and get fragrant. Then add green chilli, onion chopped and cook till it changes colour.
  2. Add cumin, coriander powder, salt, slight sugar. Mix well. Now add the cooked rice and mix it gently.
  3. In a separate bowl, crack open the eggs, add slight salt and beat well. Now add this beaten egg mixture in the karai. The egg will start to coat the rice and form very small scrambly texture.
  4. Also add black pepper powder and start mixing. Always remember to mix with gentle hands or else the rice will turn mushy which will degrade the taste and flavour. Add coriander leaves chopped. Mix well and saute for 2 mins. Serve hot.
