  3. Cook Gizzard and remove from heat once it’s cooked through, drain any excess water
  4. Heat up oil and fry gizzard; remove once it’s fried and brown, sieve and reduce the oil, place pot back on heat and add the diced onion, tomatoes and tatashe; allow it fry for about 5 minutes
  5. Add stock and salt, stir in dried herbs and then add gizzard, stir and finally add your fried plantain
  6. Mix everything together cook for another 2 minutes, then turn off heat. Serve with your jollof rice
