Take 200 gms Khoya
Prepare 1/2 Cup Ghee
Take 3-4 Laung (Cloves)
Prepare 3-4 Hari elaichi (Green cardamom)
Prepare Cheeni (Sugar) 1 & ½ Cups or to taste
Prepare 1/2 Cup Doodh (Milk)
Get 1/2 tsp Lemon juice
Take Remaining boiled rice
Prepare 1/2 tbs Kewra water
Take Green colored rice
Get Red colored rice
Get Yellow colored rice
Make ready Colorful Ashrafia (Maraba)
Instructions to make Matanjan Recipe:
In 3 bowls,add ½ cup of boiled rice in each bowl. - Add yellow color,red color,green color,mix well & set aside.
In pot,add butter and let it melt,add dried coconut,almonds,pistachio and fry for 2 minutes. - Add raisins and fry for 1 minute & take out in a bowl.
Add sugar and mix well. - Add khoya,mix continuously and fry until brown and take out in a bowl.
In the same pot,add ghee and let it melt. - Add cloves,green cardamom and mix.
Add sugar and milk,mix well and cook until sugar is dissolved. - Add lemon juice and mix well.
Add remaining boiled rice and mix well. - Add half quantity of fried dry nuts and give it a good mix.
Add kewra water,mix well and cook for 4-5 minutes. - Add half quantity of fried khoya and mix well.
Garnish with fried khoya,fried dry nuts and Maraba's and serve.
