Instructions to make Rajma Galouti kebab:
  1. Firstly, soak 1 cup rajma in enough water for 8 hours or overnight.
  2. Transfer to the cooker, add  water, salt and pressure cook for 6 whistles or until rajma is cooked well.
  3. Drain off the water from rajma, cool completely and transfer the rajma into the blender to blend a smooth paste.
  4. Now in a small blender take soaked cashews, almonds, fried onions, chilli and cardamom.
  5. Add saffron water and blend into a smooth paste.
  6. Add chilli powder, garam masala, salt and masala paste.
  7. Now add kewda, rose water, ghee and roasted gram flour.
  8. Mix well, so that the spices are combined well.
  9. Grease the hands with oil and shape a small ball sized mixture into kabab.
  10. Roast on both sides until the galouti kebab turns golden and crisp.
  11. Finally, enjoy rajma galouti kabab with green chutney.
