  1. Make ready 1/2 kg Rice

  18. Take 1 tsp Garam masala power
  19. Prepare 1/2 tsp Yellow colour
  20. Get 1/2 tsp Red colour
  21. Get 1/2 tsp Green colour
Instructions to make Vegetable Rainbow Rice:
  1. Soak rice for few hours.
  2. Peel and slice the onions.
  3. Roughly cut the 2 tomatoes and slice the other in rounds.
  4. Finely chop the coriander leaves.
  5. Diagonally cut the chillies.
  6. Peel and cut the potatoes into wedges.
  7. Mix together yoghurt,kewra,lemon and yellow colour.
  8. Separately dissolve both the colours in little water.
  9. Heat oil in a pan.
  10. Add in onions and fry till light golden.
  11. Add in ginger,garlic and all the vegetables.
  12. Mix them well.
  13. Add in all the spices and mix.
  14. Cook covered till vegetables are tender,moisture evaporates and masala is dry.
  15. Bhoono it well till oil floats on surface.
  16. Boil rice till done.
  17. Drain water and keep the rice aside.
  18. Spread half of the rice in a pan.
  19. Add in vegetable mixture.
  20. Add in yoghurt mixture.
  21. Add in chillies.
  22. Throw in coriander leaves.
  23. Arrange tomato slices.
  24. Cover with remaining rice.
  25. Drizzle both the colours.
  26. Sprinkle caraway seeds and garam masala.
  27. Cook covered on dum for 15-20 minutes.
  28. Serve hot.
