Steps to make Chana Masala Biryani:
Heat Ghee in a deep pan Add chopped onion and fry them until onion turn golden brown. - Remove out from Ghee.
Add Ghee in a pan - Add Bay leaf, Cinnamon and Cumin seeds
Then add the chopped onion and fry well until the onion leaves the ghee.
Add Garlic Ginger paste and fry well until it leaves the ghee.
Add Salt, Red chili powder, Turmeric powder, Coriander powder and Saute well.
Add grated tomatoes mix well for 2 minutes.
Add Curd in it. Mix them.
Add Potato and stir well.
Add chana masala until it leave the ghee.
Add boiled chana mix well. - Chana masala is ready.
For Rice - Soak basmati rice for about 30 minutes. - Heat 1 tbsp Ghee in a vasel add Bay leaf, Cloves, Mace, Cinnamon, Pepper.
Add enough Water and Salt and boil it add soaked rice and cooked until 90% - Drain cooked rice and keep aside.
Now take a clay pot and grease it with ghee. Spread lil cooked rice.
Now add chana masala and sprinkle fried onions (brishta), Mint leaves Then spread cooked rice pure 2 tbsp saffron milk over give it a quick mix.
Repeat same process Do this process 2 to 3 times.
Now seal the vessel immediately - with foil paper keep it on dum for about 30 to 45 mins.
Serve hot chana masala biryani with Lauki Raita
