Get 500 gms basmati rice
Get 1 small cauliflower florets
Take 2 carrot chopped
Prepare 2 capsicum diced chopped
Prepare 1/2 cup green peas
Get 3 onion cut in thin slices
Prepare 1 tsp ginger paste
Take 1 tsp garlic paste
Prepare 1/4 cup chopped coriander leaves
Take 2 tbsp mint leaves
Take 8-10 green chillies
Prepare 1/2 cup oil
Prepare 2 tsp ghee
Prepare 1 tbsp kasuri methi
Prepare 1/4 cup curd
Make ready 2 tsp cream or malai
Get 1/4 cup milk
Prepare few threads of saffron
Make ready 2 tsp kewra water
Take 1 tsp red chilli powder
Make ready 1 tsp biryani masala
Make ready 3 tsp salt or per as taste
Take 1 bay leaf,1green cardamom 2cloves,4-5 pepper corns
Take 1 tsp cumin seeds
Get For potli masala
Get 1 bay leaf
Take 4 4cloves
Get 2 green cardamoms
Get 1 mace
Take 1 tsp cumin seeds
Get 1 tsp fennel seeds
Take 5-6 garlic cloves
Prepare 1 inch ginger crushed
Steps to make Veg Biryani:
First, wash and socked the rice for a half-hour. Take cauliflower florets and parboil in salt and turmeric water.
In a kadhai add oil heat it then add sliced onion and fry on medium flame until they turn golden brown. Transfer them into the plate. Soak the saffron in warm milk keep aside
Take a piece of muslin cloth add above potli masala and tied it. Take a wide mouth vessel add soaked rice then add potli, add 2tsp salt or as taste add broken 5-6 green chillies. Then let it boil and cooked until 80% done. Then strain it and keep aside
In the same kadhai add chopped carrot fry them in remaining oil for 2 minutes then add cauliflower florets, peas and capsicum. Fry all for 2-3 minutes. Then transfer them into a bowl.
In the same oil add whole spices, saute few seconds then add ginger garlic paste, saute 1 minute then add red chilli powder and biryani masala.keep stiring and cook few seconds then add curd mix well and add fry veggies.mix them nicely. Now add few slit green chillies add kasuri methi and cream. Add 1tsp salt mix them and cook for 3-4 minutes.
Now take a wide vessel or wok. Add halted veggies and make a layer then spread coriander leaves and mint leaves,add some fried onion and make a layer of rice. Spread half quantity of saffron milk and half kewra water, then again make a layer of veggies then add coriander and mint leaves, add fried onion and repeat the same and make a layer, add kewra and ghee. Cover and cooked it on low flame for 5-7 minutes.
Turn off the flame and open the biryani after 10 minutes.veg layered biryani is ready.enjoy it
