The ingredients needed to make Sindhi Biryani:
Make ready 1 kg Basmati rice
Take 750 gms Mutton
Make ready 1/2 kg Chopped tomatoes
Get 10-12 pc Green chillies chopped
Prepare 1 tsp Ginger Paste
Get 1 tsp Garlic paste
Prepare 1 tsp Green chilli paste
Make ready 2 tsp Shahi zeera
Take 2-3 pcs Bay leaves
Make ready 2 tsp kashmiri red chilli powder
Make ready 2 tsp Coriander powder
Get 2 tsp Cumin powder
Prepare 1 tsp Turmeric powder
Prepare 2 tsp Garam masala
Make ready as per taste Salt
Prepare 1/2 kg Tomato puree of
Take 1/2 cup Fried onions
Get 4 tbsp Lemon juice
Make ready 1 tsp Elaichipowder
Get 1 tsp Jawatri / mace powder
Get 2 tsp Kewra water
Take 1/2 cup Chopped Coriander leaves
Make ready 2 tsp Biryani colour / orange food colour
Make ready 4 tbsp Milk
Make ready 2-3 drops Biryani essence
Prepare 1/2 tsp Grated jaifal / Nutmeg
Steps to make Sindhi Biryani:
Rice Method : Firstly in Heavy deep bottomed cookware add 2tbsp of oil.In it add 1/2 cup chopped tomatoes and 4-5 chopped green chillies and saute it for 2-3 min until it gets soft in oil. Then after that add Basmati rice 1 kg (soaked and drained at least for 1 hour) in the cookware.In it add 5 glass of water.Stir it slightly and let it cook in high flame until 75% of water is absorbed.Now Cover the pot and slow the flame and cook it for 15-20 mins in low flame and give it a proper Dum.
In a another,non-stick pan, add 4 -6 tbsp of oil.Now add ginger-garlic and green chilli paste and saute it for another 1 min.Now add mutton and mix them properly. After that add shahi zeera bay leaves and fried onions..Cook it for another 1 min by adding 1/2 cup of water.Now add all the spices : red chilli, coriander, cumin,turmeric and garam Masala powder.Now transfer the whole mutton in the pressure cooker and cook it for 10 mins with 2- 3 whistles.Now again transfer to the previous pan.
Cook it until the water dries.Then after that add tomato puree,lemon juice, elaichiand mace powder,kewra water, chopped coriander, chillies, and tomatoes and again mix them properly and cook it 5 mins until oil separtes from the mutton.
Assembling the biryani- Firstly in the cookware spread cooked mutton first layer then spread one whole layer of cooked rice Now add food colour absorbed in 4 tbsp of milk Then add 2-3 drops of biryani essence Lastly add 1/2 tsp of grated Nutmeg or jaifal
