  12. Make ready 1 tsp Crushed Coriander
  13. Take 1 tsp Chaat masala
  14. Prepare Water as required
  15. Prepare Oil for frying
Steps to make Cabbage,Onion Fritters (Pakoray):
  1. In a large bowl add cabbage, onion, capsicum, spanish, green chilli, mix the besan or gram flour, red chili powder, salt, cumin, chaat masala, crushed coriander, yogurt and 2 tbspn oil mix well. Add a little water to it and mix thoroughly with a fork or use your hands for best results. If the mixture seems too wet, add more flour and refrigerate for 10-15 minutes for best result.
  2. Heat oil in a wok or deep pan. When it is nice and hot, drop a couple of small handfuls of the pakora batter in it. Reduce the heat to medium-high and fry them till golden brown on all sides.
  3. Remove and place on paper towels or newspaper for a few minutes before serving.
  4. Serve them as such (our favorite), with tomato ketchup or some mint-coriander chutney. Don’t forget a piping hot cup of chai or coffee to go with it.
